Maize is commonly considered as food for sharing in the Rwandan Culture and is among the easiest food one can prepare.
This time you can try to prepare it a bit different from the usual way of grilling with nothing applied to it.
Adding garden fresh tomatoes and feta cheese create a delicious topper in this grilled maize recipe.
6 maize
- White and/ or yellow maize
- 3 table spoons
- Butter, softened
- 1cup chopped, yellow or red tomatoes
- Fresh basil leaves
- ¼ cup crumbled feta cheese
Directions
To prepare, peel back husks; remove maize silk. Strip about half the husks from each cob. Fold husks back around tops of cobs.
Tie husk tops with a piece of maize husk or 100 percent cotton kitchen string. In a large kettle or Dutch oven cook maize, covered, in boiling water for 5 minutes. Drain.
Grill on rack of uncovered grill directly over medium coals for 10 minutes or until tender, turning several times. (For a gas grill, preheat grill to medium. Prepare as above.)
To serve, brush cobs with butter. Top with tomatoes, basil and feta cheese.
